Nitrate/nitrite free bacon is bacon that does not have added preservatives added that include sodium nitrate. Nitrate free bacon is a type of uncured bacon produced to eliminate unwanted additives to bacon.
It is part of a collection of types of bacon that are meant to be healthier for various reasons, grouped with turkey bacon, beef bacon, Canadian bacon, Italian bacon and even buckboard bacon.
Bacon brands that are nitrate free are targetted toward consumers whoe want to enjoy bacon, without the extra worry about added preservatives.
What is uncured bacon?
Uncured bacon is essentially the same as nitrate free bacon. The word "cured" is duplicitious in this respect because both cured and uncured bacons are actually cured when referring to curing as the process in which a meat is preserved. All food manufacturers that are packaging and selling bacon must use some type of curing process to preserve the meat, prevent the growth of harmful bacterium and provide the best tasting and safest experience for the consumer.
Uncured bacon is a myth. All bacon is cured, but for the sake of using a common language coupled with how consumers refer to nitrate free bacon, we will also use the term "uncured" to mean "nitrate free", instead of its true literal meaning of not being preserved at all.
Uncured bacon, assumed the absence of direct sodium nitrate being added to the brine during the curing process. As a replacement for sodiumn nitrate, uncured bacon and nitrate free bacon, are preserved by adding high volumes of salt and celery salt that naturally contains a high concentration of naturally occurring nitrates.
The shelf life of uncured bacon is considerably reduced compared to that of non nitrate free bacon. Simply put, the natural process of material breakdown will occur at a much more rapid pace than that of organic/carbon materials without the intervention of chemical preservatives. In a nutshell, if you would like to consume uncured bacon, find a great vendor and freeze it or consume it quickly.
Why eat nitrate free bacon?
Nitrates may introduce a small yet possible risk of developing cancer. Because of this, there are legal limits to the amount manufacturers can add to foods, noted in a report in the July 2009 issue of “The American Journal of Clinical Nutrition.”
The preservatives found in processed meats,including bacon, also may cause other chronic diseases, such as diabetes and cardiovascular disease.
So, why task a risk? Let’s eat natural, preservative and nitrate free bacon and not worry about harmful chemicals wreaking havoc on our systems.
